*Blueberry Swirl Cheesecake Bars*
- 1 1/4 cup room temp butter
- 1/2 cup granulated sugar
- 2 cup all purpose flour
- 2 tbsp lemon zest
- 1 pinch salt
- 1 1/2 cup frozen blueberries
- 3 tbsp brown sugar
- 2 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 cup granulated sugar
- 1 tbsp vanilla
- 2 eggs
- 2 packages 8 oz blocks of cream cheese at room temp
- 1 cooking spray
- preheat oven 350F, spray 9 x 13 pan with cooking spray
- in a bowl, beat butter with 1/2 cup sugar until creamy
- beat in flour, 2 tablespoons lemon zest and salt until combined
- press dough into prepared pan, bake 20 - 25 min or till edges turn lightly golden
- in a sauce pan combine blueberries, brown sugar, lemon juice and zest cook over medium heat just till bubbling stirring for 1 minute remove from heat, allow to cool to room temp
- beat cream cheese, granulated sugar and vanilla with mixer till smooth, beat in egg one at a time
- smooth cream cheese mixture over warm crust
- spoon blueberry mixture all over the top
- gently swirl a butter knife through to create swirls, careful not to drag knife into the bottom crust
- bake till filling is set, about 35-40 min
- cool 1hr then refrigerate till well chilled before cutting into bars
