One Potato, Two Potato Chicken Stew
- 2 14 cups chicken broth
- 2 chicken tenderloins, boneless, chopped
- 2 onions, sliced
- 4 scallions, sliced
- 2 garlic cloves, minced
- 1 jalapeno pepper, seeded and minced
- 4 celery ribs, sliced
- 2 tomatoes, chopped
- 1 cup potato, diced
- 1 cup sweet potato, diced
- 12 teaspoon dried oregano
- 2 bay leaves
- 12 teaspoon black pepper
- 14 cup parsley, chopped
- Heat 1/4 cup broth in large saucepan.
- Add chicken and saute till no longer pink.
- Add onions, scallions, garlic, jalapeno pepper and celery and saute till onion softens, 4 more minutes.
- Stir in remaining broth, tomatoes, potato, sweet potato, oregano, bay leaves and black pepper.
- Bring to a boil, reduce heat, cover and simmer about 18 minutes.
- Remove bay leaves and serve topped with parsley.
