Apricot Cardamom Bars Recipe
- 1 c. All-purpose flour
- 1/2 c. Brown sugar, packed
- 1/2 tsp Baking pwdr
- 1/4 tsp Baking soda
- 1/4 tsp Grnd cardamom see note
- 1/2 c. Apricot nectar
- 1/4 c. Unsweetened applesauce
- 2 Tbsp. Vegetable oil
- 1 x Egg slightly beaten
- 1/2 c. Dry apricots finely minced
- 1/2 c. Powdered sugar
- 3 tsp Apricot nectar
- Preheat oven to 350 degrees.
- In a medium bowl, stir together flour, brown sugar, baking pwdr, baking soda, and cardamom; set aside.
- In a small bowl, stir together apricot nectar, applesauce, oil and egg till combined.
- Add in to dry ingredients, stirring just till combined.
- Stir in apricots.
- Spread batter in an ungreased 11 x 7 x 1 1/2-inch baking dish.
- Bake for about 25 min, or possibly till a toothpick inserted near the center comes out clean.
- Cold in pan on a wire rack.
- Drizzle with Apricot Icing.
- Cut into bars.
- For Apricot Icing, in a small bowl, stir together powdered sugar and sufficient apricot nectar to make a glaze.
- NOTES Substitute 1/8 tsp.
- grnd cloves, if you like.
