Cheese Soup (From Switzerland)
- 12 cup oatmeal
- 1 teaspoon salt
- 12 cup butter
- 4 -6 cups water (or consomme)
- 2 potatoes, peeled and cut into thin slices
- 2 cups grated emmenthaler cheese
- 1 dash nutmeg (optional)
- Saute the oatmeal and salt in half the butter until golden brown.
- Add the water; bring to a boil.
- Cook over low heat, stirring occasionally and adding water if necessary, until the oatmeal is cooked into a gruel.
- This will take about 90 minutes.
- Add the sliced potatoes.
- Cook about 30 minutes until they are tender.
- Stir in the grated cheese, remaining butter and nutmeg if desired.
- Add additional hot water if it's too thick.
