French Picnic Potato Salad
- 2 lb. red new potatoes King Sooper's 5 lb For $1.88 thru 02/09
- 1/3 cup KRAFT Balsamic Vinaigrette Dressing
- 2 Tbsp. water
- 1 tsp. Dijon mustard
- 1/2 tsp. minced garlic
- 1/4 tsp. ground black pepper
- 2 stalks celery, chopped
- 1 cup chopped red peppers
- 1 cup sliced radishes
- 4 green onions, thinly sliced
- 1/4 cup coarsely chopped fresh parsley
- 2 hard-cooked eggs, finely chopped
- Cook potatoes in boiling water in saucepan 15 to 20 min.
- or just until tender; drain.
- Let stand 10 min.
- or just until cool enough to handle.
- Meanwhile, mix next 5 ingredients until blended.
- Cut potatoes into quarters; place in large bowl.
- Add dressing mixture; mix lightly.
- Let stand 15 min.
- Add all remaining ingredients except eggs; mix lightly.
- Top with eggs.
