Zingara sauce Recipe

  1. 1. simmer mushrooms in wine.
  2. 2. strain the wine and save the mushroom.
  3. 3. return wine back to pan and reduce by half
  4. 4.add glace, tomato sauce, and stock and simmer for 5-10 minutes.
  5. 5. strain the sauce and finish it with the mushrooms, truffles, and ham
