Catfish with Cornmeal-Mustard Topping

  1. Preheat the oven to 450F.
  2. Line a baking sheet with aluminum foil.
  3. Lightly spray the foil with cooking spray.
  4. Place the fish on the foil so the fillets dont touch.
  5. Spread the mustard over the tops.
  6. In a small bowl, stir together the cornmeal, paprika, and garlic powder.
  7. Sprinkle over the fish.
  8. Bake for 15 minutes, or until the fish flakes easily when tested with a fork.
  9. Remove from the oven.
  10. Sprinkle with the salt, and then with the parsley and hot-pepper sauce.
