Macaroni And Shrimp Salad
- 1 (8 oz.) pkg. elbow macaroni
- 1 c. chopped celery
- 1 chopped pimento
- 1 c. cooked or canned shrimp
- 1 Tbsp. minced sweet onion
- 1 green pepper, slivered
- French dressing (thin)
- about 3/4 c. mayonnaise
- 1 hard-cooked egg, sliced
- crisp salad greens
- Cook macaroni in boiling salted water only until just tender, then drain.
- Rinse with cold water and drain again.
- Chill thoroughly.
- Mix chilled macaroni with celery, pimento, shrimp, onion and green pepper.
- Add French dressing to coat the ingredients and marinate for at least a hour.
- Drain any excess French dressing from salad and add mayonnaise to bid the ingredients together.
- Pile in a lettuce lined bowl and garnish with egg slices.
- Or pile into individual lettuce cups and garnish with egg slices.
- Makes 6 to 8 servings.
