Grilled Polenta With Fontina

  1. In small bowl, combine tomatoes, parsley, salt, and pepper; set aside.
  2. Brush both sides of polenta slices with olive oil.
  3. Place polenta on grill over medium heat and cook 5 minutes or until underside is golden.
  4. Turn slices over and top with Fontina cheese.
  5. Cook polenta about 5 minutes longer or just until cheese melts.
  6. Transfer polenta slices to platter and top with tomato mixture.
