Grilled Polenta With Fontina
- 2 medium tomatoes
- 2 tbsp. chopped fresh parsley leaves
- 1/4 tsp. salt
- .13 tsp. coarsely ground black pepper
- 1 package precooked polenta
- 1 tbsp. olive oil
- 2 oz. Fontina cheese
- In small bowl, combine tomatoes, parsley, salt, and pepper; set aside.
- Brush both sides of polenta slices with olive oil.
- Place polenta on grill over medium heat and cook 5 minutes or until underside is golden.
- Turn slices over and top with Fontina cheese.
- Cook polenta about 5 minutes longer or just until cheese melts.
- Transfer polenta slices to platter and top with tomato mixture.
