Mexican Corn Soup
- 2 tablespoons olive oil
- 1 cup onion
- 34 cup green pepper, chopped
- 3 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (30 ounce) can yellow hominy, drained
- 1 cup frozen green pea
- 3 12 cups water
- 1 teaspoon cumin
- 1 teaspoon oregano
- 14 cup fresh cilantro, chopped
- 12 fresh jalapeno, to taste,sliced
- Heat oil and saute onion, green pepper and garlic until it is soft.
- Add the remaining ingredients.
- Heat until boiling.
- Garnish with broken tortilla chips and avocado slices.
