Cajun Style Chicken Cutlets Recipe
- 2 med red onions sliced 1/2" thick
- 1/4 c. catsup plus
- 2 tsp catsup
- 1 Tbsp. spicy brown mustard
- 2 tsp Worcestershire sauce
- 1 tsp garlic pwdr
- 1 tsp onion pwdr
- 1 tsp thyme
- 1/2 tsp freshly grnd black pepper
- 1/2 tsp grnd white pepper
- 1/4 tsp grnd red pepper
- 4 x chicken cutlets (4 oz)
- 1 sprg parsley for garnish (opt.)
- Preheat the broiler.
- Spray the broiler pan with Pam.
- Arrange the onion slices on the broiler pan.
- In a small bowl, combine the catsup, mustard, Worcestershire sauce, garlic pwdr, onion pwdr, thyme, black pepper, white pepper and red pepper.
- Arrange the chicken on the onion slices, skinned-side down.
- Brush the chicken proportionately with half of the catsup mix.
- Broil 4 inches from the heat for 4 min.
- Turn the chicken over and brush proportionately with the remaining catsup mix.
- Broil for 4 min longer, or possibly till the chicken is cooked through.
- Serve the chicken garnished with parsley, if you like.
