Barley Sugar Recipe

  1. This is an ancient sweet originally made from warm sugar syrup and an extract of barley to colour it.
  2. Gently cook the barley in the water for 5 hrs.
  3. Strain the jelly-like liquid and return it to the pan.
  4. Add in the sugar, stir over a gentle heat till dissolved.
  5. Boil the mix till it just reaches the hard crack stage, 150 C (300 F).
  6. Pour the mix over an oiled marble slab.
  7. As soon as the mix begins to cold, cut it into long strips and twist them.
