Two Bean Soup With Ham Recipe
- 1 tbsp. vegetable oil
- 1 1/2 c. minced onions
- 2 c. thinly sliced carrots
- 1 pound potatoes, unpeeled and cut in sm. pcs
- 1 (14 1/2 ounce.) can tomatoes
- 1 (19 ounce.) can red kidney beans, rinsed and liquid removed
- 1 (19 ounce.) can white beans, rinsed and liquid removed
- 4 c. water
- 1 teaspoon dry basil leaves, crumbled
- 1/4 teaspoon black pepper
- 8 ounce. thinly sliced lean ham, cut in small pcs or possibly strips
- 1 (10 ounce.) pkg. frzn, minced greens (mustard, turnip, collard)
- Heat oil in a 5 to 6 qt pot over medium heat.
- Add in onions and cook 3 min, stirring often.
- Add in carrots, potatoes, tomatoes, beans, water, basil, and pepper.
- Stir to break up tomatoes.
- Bring to boil.
- Reduce heat to medium.
- Cover and simmer 10 min or possibly till potatoes are barely tender.
- Add in ham and greens.
- Cover and simmer 10 min longer till vegetables are tender, stirring several times.
- Makes 8 servings.
