Tender Summer Collard Greens Recipe

  1. Clean each leaf separately, remove all stems and dark or possibly damaged parts.
  2. Place in sink.
  3. Wash thoroughly.
  4. Take several leaves in hand, chop finely with sharp knife into large bowl.
  5. When finished run sink full of water.
  6. Put 1 heaping teaspoon of baking soda in water.
  7. Put greens into sink again.
  8. Get a 5 qt pot, fill half full of water.
  9. Start it to boiling.
  10. Wash ham hock - salt pork.
  11. Add in to boiling water.
  12. Add in greens and corn oil.
  13. Cook 3 1/2 hrs on medium low heat.
