Balsamic-Orange Couscous

  1. Place couscous in a large bowl.
  2. Combine water and juice in a small saucepan.
  3. Bring to a boil.
  4. Pour water mixture over couscous.
  5. Cover tightly and let stand for 5 minutes.
  6. Fluff with a fork and let cool for 10 minutes.
  7. Meanwhile, prepare vegetables and add to couscous mixture.
  8. Stir balsamic vinegar with orange peel, garlic, salt and pepper in a small bowl.
  9. Whisk in olive oil then drizzle over couscous mixture.
  10. Toss to combine.
  11. Taste and adjust seasoning just before serving if necessary.
