Citrus Marinated Olives
- 2 cups mixed olives, oil packed and drained
- 12 orange, quartered and thinly sliced
- 12 cup extra virgin olive oil
- 3 garlic cloves
- 1 tablespoon coriander seed, crushed
- 2 bay leaves
- 1 small red pepper, halved lengthwise
- Place the olives and orange slices in a bowl.
- Heat oil in a small saucepan over low heat; add garlic, coriander, bay leaves, and red pepper.
- Cook until fragrant and garlic just starts to brown, about 20 minutes.
- Remove from heat and let stand 1 hour.
- Pour over olives and marinate 2 hours at room temperature.
- Keeps 4 days, chilled.
