Farmer's Salad
- 1 preserved lemon, chopped
- 1/4 cup olive oil
- 2 tablespoons chopped fresh parsley
- 1 tablespoon honey
- Kosher salt and freshly ground black pepper
- 1 bunch fresh salad greens
- 3 mini bell peppers, sliced
- 1 cup goat's milk feta, crumbled
- 1 cup hazelnuts, toasted and chopped
- Whisk together the preserved lemon, olive oil, parsley, honey and some salt and pepper in a large bowl.
- Add the salad greens, bell peppers, feta and hazelnuts, toss together and serve.
