Lemon-Caper Salmon

  1. Heat nonstick 12-inch skillet over medium-high heat until hot.
  2. Add salmon fillets to skillet; sprinkle with 1/4 teaspoon salt and 1/8 teaspoon coarsely ground black pepper.
  3. Cook salmon 10 minutes or until fish flakes easily when tested with fork, turning once halfway through cooking.
  4. Transfer salmon to platter; keep warm.
  5. Meanwhile, from 1 lemon, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice.
  6. Slice remaining lemon for garnish; set aside.
  7. Reduce heat to medium; add capers to skillet and cook 1 minute, stirring.
  8. Add garlic and cook 30 seconds longer.
  9. Add broth, lemon peel, and lemon juice, and heat through, stirring occasionally.
  10. To serve, spoon sauce over salmon and garnish with lemon slices.
  11. Makes 4 main-dish servings.
