Braised Red Cabbage 2 Recipe
- 1 Tbsp. extra virgin olive oil (15 mL)
- 3 x large onions, thinly sliced (about 2 pounds/1 kg)
- 1/4 tsp grnd cinnamon (1 mL)
- 1/4 tsp grnd cloves (1 mL)
- 1/4 tsp grnd cumin (1 mL)
- 1 x small red cabbage, thinly sliced (about 1 lb./500 g)
- 1/4 c. apple cider (60 mL)
- 1/4 c. brown sugar (60 mL)
- 1/4 c. red wine vinegar (60 mL)
- In a large pot heat the extra virgin olive oil over medium-high heat and saute/fry the onions till soft.
- Add in the cinnamon, cloves and cumin and cook for 30 seconds.
- Fold in the cabbage and saute/fry for 5 min, till wilted.
- Add in the cider, sugar and vinegar.
- Cover and braise over low heat till the cabbage is tender, about 20 min.
- Serve hot.
