Kale and White Bean Soup
- 3 1/2 oz. fully cooked chorizo
- 1 large onion
- 10 c. chopped kale leaves
- 1/4 tsp. Pepper
- 1 can stewed tomatoes
- 1 can white beans
- 2 c. water
- 1/4 tsp. salt
- Brown chorizo in 7-qt.
- saucepot on medium 3 minutes or until crisp, stirring.
- Stir in onion; cook 5 minutes or until tender.
- Stir in kale leaves and pepper; cook 1 minute.
- Add tomatoes, white beans, and water.
- Heat to boiling on high, then simmer on medium-low 10 minutes or until tender.
- Stir in salt.
