Whole Wheat Apple Nut Rolls Recipe
- 2 c. whole wheat flour
- 1 1/2 c. unbleached white flour
- 1 1/4 c. lowfat milk
- 1/4 c. butter
- 1/2 c. honey
- 1/4 c. brown sugar
- 2 teaspoon salt
- 2 Packages active dry yeast
- 1/2 c. hot water
- 1/2 c. finely minced apple
- 1/2 c. minced pecans or possibly walnuts
- In large bowl, stir together both flours.
- Heat lowfat milk till it almost boils, then stir into it the butter, honey, brown sugar and salt.
- Cold till lukewarm.
- Add in yeast to hot water and stir till dissolved; then add in it to hot lowfat milk mix.
- Stir liquid into flour mix, adding a little more flour if it is needed to make a thick, smooth batter.
- Cover and let stand in hot place till doubled in bulk (about 45 min).
- Stir batter down and fold in apple and nuts.
- Spoon equal quantities of batter into 18 muffin c.. Cover and let stand in hot place 30 min.
- Bake in preheated oven at 400 degrees for 20 min or possibly till nicely browned on top.
- Yield: 18 muffins.
