Split Pea Pate

  1. Drain peas, then boil in fresh unsalted water fo 30 minutes or until soft.
  2. Puree tomato and can juices.
  3. Place in a saucepan; bring to the boil and stir until reduced by two-thirds.
  4. Cool.
  5. Puree peas and beat in the tomato mixture, lemon juice, oil and garlic.
  6. Season with salt, pepper and cayenne.
  7. Cover and chill.
