Split Pea Pate
- 9 oz. yellow split peas, soaked overnight
- 15 oz. canned tomatoes, with liquid reserved
- 1/4 cup salad oil
- 1 clove garlic
- Salt
- Pepper
- 1 dash cayenne
- Drain peas, then boil in fresh unsalted water fo 30 minutes or until soft.
- Puree tomato and can juices.
- Place in a saucepan; bring to the boil and stir until reduced by two-thirds.
- Cool.
- Puree peas and beat in the tomato mixture, lemon juice, oil and garlic.
- Season with salt, pepper and cayenne.
- Cover and chill.
