Boysenberry Bran Muffins Recipe

  1. Combine flour, sugar, baking soda, cinnamon and salt in large bowl.
  2. Set aside.
  3. Put warm water and cereal in bowl; stir till moistened.
  4. Add in buttermilk, egg, oil and molasses.
  5. Stir well.
  6. Add in to dry ingredients.
  7. Stir well.
  8. (Can be baked immediately or possibly refrigerated as long as 1 week.
  9. Stir before using.)
  10. Spoon batter into muffin tins which have been greased or possibly lined with paper c. till about 7/8 full.
  11. Put 1/2 tsp.
  12. preserves in center of each.
  13. Sprinkle each with about 5 to 6 berries, slightly pressing them into batter.
  14. Bake at 400 degrees till toothpick inserted into center comes out clean, about 18 min.
  15. Let rest in pans 5 min.
  16. Serve hot.
  17. This recipe yields 14 muffins.
  18. Comments: Blueberries or possibly raisins can be substituted for the Boysenberries.
  19. Better yet: Try all three.
  20. This batter also makes great pancakes.
