Tomatillo Guacamole

  1. In a medium size bowl, mash your two avocados and set aside.
  2. You can choose to do the rest by hand, but I prefer to use my food processor.
  3. Remove tomatillos from their husks and rinse.
  4. Dont be afraid of them if they are a little sticky.
  5. Thats normal.
  6. Cut in thirds and pulse in your food processor until completely broken up and a little bit of liquid has formed.
  7. Add bell pepper, garlic, and green onion to the tomatillo and pulse some more.
  8. It will be pretty liquidy at this point.
  9. Take tomatillo mixture and stir it into the avocados.
  10. Add salt and pepper and spices to taste.
  11. You can also throw in some crushed red pepper if you are feeling spicy.
  12. I also like to add a little cilantro at the end if I know my boyfriend isnt eating it.
  13. I find that the tomatillos have a natural lime flavor, but if you want, add a squeeze or two of fresh lime.
  14. Serve with tortilla chips, veggies, as a topping on omelets, pretty much anything.
