Tomatillo Guacamole
- 2 whole Avocados (medium)
- 5 whole Tomatillos
- 1/2 whole Green Bell Pepper
- 1 clove Garlic
- 3 whole Green Onions
- 4 dashes Salt And Pepper
- 1/2 teaspoons Cumin
- 1/4 teaspoons Cayenne
- Chopped Cilantro, Crushed Red Pepper, Lime Juice To Taste (optional)
- In a medium size bowl, mash your two avocados and set aside.
- You can choose to do the rest by hand, but I prefer to use my food processor.
- Remove tomatillos from their husks and rinse.
- Dont be afraid of them if they are a little sticky.
- Thats normal.
- Cut in thirds and pulse in your food processor until completely broken up and a little bit of liquid has formed.
- Add bell pepper, garlic, and green onion to the tomatillo and pulse some more.
- It will be pretty liquidy at this point.
- Take tomatillo mixture and stir it into the avocados.
- Add salt and pepper and spices to taste.
- You can also throw in some crushed red pepper if you are feeling spicy.
- I also like to add a little cilantro at the end if I know my boyfriend isnt eating it.
- I find that the tomatillos have a natural lime flavor, but if you want, add a squeeze or two of fresh lime.
- Serve with tortilla chips, veggies, as a topping on omelets, pretty much anything.
