All In! Chilli Con Carne - mild
- 1 tsp organic butter
- 1 tbsp olive oil
- 500 grams lean minced beef
- 2 medium onions, chopped
- 3 garlic cloves
- 1 tsp chilli powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tbsp plain flour
- 300 ml beef stock
- 400 grams chopped tomatoes
- 200 grams mixed beans
- 3 tbsp tomato puree
- 1 tsp caster sugar
- 1 tsp dried oregano
- 1 bay leaf
- 1 pinch black pepper
- 1 pinch black sea salt
- 3/4 medium sweet pepper, diced
- 1 large carrot, diced
- Mix together the olive oil and butter.
- Break up the mince and stir in the pinch of salt and pepper.
- Add the oily butter to a hot pan.
- Add the onion, minced beef, sweet pepper and carrot.
- Fry for about 5mins.
- Add the garlic, chilli powder, cumin and coriander.
- Stir and fry for a few mins.sprinkle over the flour and stir well.
- Stir in the stock.
- Tip in the tomatoes, tomato puree, mixed beans, caster sugar, oregano and bay leaf.
- Stir well.
- Cover loosely with a lid.
- Reduce the heat and leave to simmer for about 45minutes until the sauce has thickened.
- Season to taste and serve!
