Chocolate Orange Cake
- Pam spray
- 1 egg
- 1/2 cup lowfat buttermilk
- 2 tsp. very ripe bananas
- 2 tbsp. orange juice
- 1 tsp. orange peel, finely grated
- 1 tsp. vanilla
- 3/4 cup sugar
- 1 cup self-rising flour
- 1 tsp. baking soda
- 1/2 cup tiny semisweet chocolate chips
- Cocoa powder
- Orange peel
- Preheat oven to 350F.
- Coat a bundt pan or 8x8-inch pan with Pam.
- Beat egg for 2-3 minutes at medium speed.
- Gradually add sugar, beat constantly.
- Add the remaining ingredients except garnish.
- Mix gently.
- Pour into the bundt and bake 30 minutes or until toothpick inserted in the center comes out clean.
- Cool completely, turn out on a plate and sprinkle with cocoa and orange peel.
