Plums With Chevre and Lavender Sugar

  1. Halve plums; remove stones.
  2. Place plum halves cut sides up on dessert plates.
  3. Fill center of each plum half with a dollop of cheese.
  4. Gently press halves together to reassemble plums.
  5. Insert a mint sprig in the stem end of each plum.
  6. Crush lavender with sugar in a mortar; sprinkle over plums.
