Spinach & Cheese Flatbread Melt

  1. For each serving: Spread half of 1 flatbread with 3 Tbsp.
  2. hummus, spread remaining half with 1-1/2 Tbsp.
  3. mustard.
  4. Top with 1/4 cup spinach, 2 Tbsp.
  5. onions, 2 cheese slices and 2 Tbsp.
  6. feta; fold in half.
  7. Brush 350 degrees F flat-top griddle with 1 Tbsp.
  8. oil.
  9. Add sandwich; cook 2 to 3 min.
  10. on each side or until crisp and golden brown on both sides.
  11. Cut into 4 wedges.
  12. Serve with 1 cup soup.
