Spinach & Cheese Flatbread Melt
- 12 each flatbreads (10 inch)
- 2-1/4 cups ATHENOS Roasted Red Pepper Hummus
- 1 cup GREY POUPON Country Dijon Mustard
- 3 cups frozen chopped spinach, thawed, squeezed dry
- 1-1/2 cups yellow onions, caramelized King Sooper's 1 lb For $0.99 thru 02/09
- 24 slices Havarti cheese, sliced
- 1-1/2 cups crumbled feta cheese
- 3/4 cup olive oil
- 3 qt. tomato vegetable soup
- For each serving: Spread half of 1 flatbread with 3 Tbsp.
- hummus, spread remaining half with 1-1/2 Tbsp.
- mustard.
- Top with 1/4 cup spinach, 2 Tbsp.
- onions, 2 cheese slices and 2 Tbsp.
- feta; fold in half.
- Brush 350 degrees F flat-top griddle with 1 Tbsp.
- oil.
- Add sandwich; cook 2 to 3 min.
- on each side or until crisp and golden brown on both sides.
- Cut into 4 wedges.
- Serve with 1 cup soup.
