Oatmeal Banana Pancakes

  1. Heat frying pan or griddle to medium heat.
  2. Put all of the ingredients in a blender (except oil) and blend thoroughly.
  3. Place the coconut oil in the pan and allow to melt.
  4. Pour about 1/3 cup portions of batter from the blender onto the pan, and fry until golden and thoroughly cooked on each side.
  5. These are lovely with a little maple syrup or jam, or just plain.
  6. Great healthy breakfast for babies and toddlers, too!
