Oatmeal Banana Pancakes
- 2 whole Eggs
- 1 cup Gluten Free Oats
- 1/4 cups Water
- 1 teaspoon Vanilla (optional)
- 1 whole Banana
- 1 teaspoon Coconut Oil, For Cooking
- Heat frying pan or griddle to medium heat.
- Put all of the ingredients in a blender (except oil) and blend thoroughly.
- Place the coconut oil in the pan and allow to melt.
- Pour about 1/3 cup portions of batter from the blender onto the pan, and fry until golden and thoroughly cooked on each side.
- These are lovely with a little maple syrup or jam, or just plain.
- Great healthy breakfast for babies and toddlers, too!
