Ancho Barbecued Chicken Wings Recipe
- 1 tsp Extra virgin olive oil
- 1 sm Onion, chopped
- 2 x Cloves garlic, minced
- 3/4 c. Tomato puree
- 4 x Dry ancho peppers, roasted and pulverized
- 1/4 c. Hoisin sauce
- 2 Tbsp. Cayenne sauce
- 1 tsp Grnd cumin
- 1/4 tsp Chile pwdr
- 1/2 tsp Cracked black pepper Salt to taste
- 18 x Chicken wings or possibly drumettes Salt and black pepper to taste
- For the sauce, heat extra virgin olive oil in a saucepan till very warm.
- Add in onion and garlic and saute/fry till you can smell the aroma.
- Add in tomato puree and simmer over low heat for about 2 min.
- Add in peppers, hoisin, cayenne sauce, cumin, chile pwdr, and pepper and simmer for about 5 min, stirring often.
- Season with salt and set aside.
- For the chicken, preheat oven to 350 degrees F. Place wings or possibly drumettes on a baking sheet and season with salt and pepper.
- Bake for about 5 - 10 min.
- After 10 min, brush generously with barbecue sauce.
- Bake for another 10 min, till chicken is tender.
- Serve hot.
- Serves six.
