Impossible Taco Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) envelope taco season mix
- 1 (4 oz.) can chopped green chilies, drained
- 2 c. milk
- 1 1/3 c. Bisquick baking mix
- 4 eggs
- 2 tomatoes, sliced
- 1 c. shredded Monterey Jack or Cheddar cheese (approximately 4 oz.)
- dairy sour cream
- chopped tomatoes and shredded lettuce (optional)
- Heat oven to 400u0b0.
- Lightly grease a 10-inch pie plate.
- Cook and stir ground beef and onion in a skillet until brown.
- Drain. Stir in taco season mix.
- Spread in plate and sprinkle with chilies.
- Beat milk, baking mix and eggs until smooth, about 15 seconds in blender on high or 1 minute with hand beater.
- Pour on top of hamburger, onion and chilies.
- Bake at 400u0b0 about 30 to 35 minutes or until knife inserted in center comes out clean.
- Top with tomatoes and sprinkle with cheese.
- Serve with sour cream, chopped tomatoes and shredded lettuce if desired.
- Makes 6 to 8 servings.
