Potato Bisque Soup Recipe
- 1 pound Italian sausage (sliced)
- 1/2 c. minced onion
- 2 (1 lb.) cans tomatoes
- 4 potatoes (pared and sliced) 6 c.
- 1/4 c. parsley
- 1 bay leaf
- 1 tbsp. salt
- 1 c. diagonally sliced carrots
- 2 tbsp. minced celery
- 1 1/2 c. water
- 1/4 teaspoon pepper
- 2 beef bouillon cubes
- 1/2 teaspoon dry thyme leaves
- 1 tbsp. lemon juice
- In large saucepan brown sausage.
- Add in onion and cook 5 min.
- Add in remaining ingredients.
- I put everything in the crockpot after the browned sausage and cook all day on low.
- Last hour on high to cook potatoes.
