Stewed Sea Bream Cutoffs
- 1 Sea Bream cuttoffs (head, spine, tails)
- 1 Seasonal burdock
- 200 ml Water
- 200 ml Sake
- 100 ml Mirin
- 4 tbsp Sugar
- 70 ml Soy sauce
- Pour hot water over the fish.
- Rinse in cold water and descale using the back of a knife.
- This is seasonal burdock.
- Cut the burdock into easy-to-eat sized pieces.
- Put the burdock in a pan, add water, sake, mirin, sugar, and the boiled Sea Bream pieces.
- Boil for 4-5 minutes on heat, diligently remove the scum.
- Add 1 tablespoon soy sauce, and then add the rest.
- Make a drop lid by covering the pot with aluminum foil and steam for 12-13 minutes.
- In between, spoon the sauce over the fish.
- Add soy sauce at the finish.
- Done!
