sig/*ari* red onion and goats cheese bake
- 60 ml olive oil
- 1 kg red onions,thinly sliced
- 3 clove garlic thinly sliced
- 1 tsp chopped fresh thyme
- 1 tsp soft bown sugar
- 2 tsp sherry vinegar
- 1 pinch salt and pepper
- 225 grams Fotina cheese ,thinly sliced
- 1 packages of ready made puff ( flakey ) pastry
- 1 large packet of brie like goats cheese
- roll out your bought or made pastry to fit square ,greased baking tin .Make an edge on bake by cutting the edge of squared pastry an double laying the edges with this( spread edges of pastry with butter then top with cut of pieces)
- heat oil in large pan ,add onions and cook gently for about 30 minutes,add garlic and thyme cook for ten minutes add sugar and vinegar cook until slightly caramelized .season and cool
- preheat oven and bake pastry for about 15 minutes,then spread onions over base,add the cheese .Add a slice of brie like goats cheese of your liking for each person and bake for 15-20 more minutes until Fotina cheese is bubbling.Serve straight away,.
