Lumberjack Cheesecake Slice
- Base
- 1 1/2 cups sweet biscuit crumbs
- 80g butter, melted
- Filling
- juice and rind of 1 orange Safeway 1 lb For $0.79 thru 02/09
- 3/4 cup dates, roughly chopped
- 500g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup caster sugar
- 2 eggs, lightly beaten
- 1 tablespoon cornflour
- 1/4 cup sour cream
- 350g can pie apples, drained Safeway 1 lb For $0.99 thru 02/09
- 1/2 cup shredded coconut, toasted
- Combine biscuit crumbs and butter and press into a lined lamington tin.
- Chill.
- Bring the orange juice and dates to the boil over medium heat.
- Reduce heat and simmer for 5 minutes or until the dates are soft.
- Beat Philly* and sugar until smooth.
- Fold in eggs, cornflour, sour cream and orange rind.
- Layer the prepared base with the apples and softened dates.
- Pour mixture over the apples, sprinkle with coconut and bake at 160C for 30 minutes or until just set.
- Serve warm or cold.
