Gingery Oatmeal Molasses Bread
- 2 cups milk
- 12 cup water
- 12 cup molasses
- 14 cup butter
- 5 12-6 cups flour
- 1 cup whole wheat flour
- 1 cup oats
- 2 tablespoons brown sugar
- 3 teaspoons salt
- 12-1 teaspoon ginger
- 12 ounce yeast, 2 packages
- In medium saucepan, heat first 4 ingredients until very warm, not boiling.
- Spoon flour into measuring cup, level off.
- In large bowl, combine warm liquid, 2 cups all-purpose flour, wheat flour, and remaining ingredients.
- Beat 2 minutes at medium speed.
- Stir in remaining all-purpose flour.
- On well-floured surface, knead dough until smooth and elastic.
- Place in greased bowl.
- Cover and let rise until doubled in size (45 to 60 minutes).
- Grease two 9 x 5 loaf pans.
- Punch down dough and divide into two loaves.
- Place in greased pans.
- Cover and let rise until doubled (45-60 minutes).
- Heat oven to 350F
- Bake 35-45 minutes or until deep golden brown and loaf sounds hollow when tapped.
- Immediately remove from pans.
- Brush with butter, if desired.
