Ukrainian Potato Babka
- 2 eggs, separated
- 2 cups hot mashed potatoes
- 1/3 cup hot cream
- rich milk
- 1/2 cup cottage cheese
- 1 tbsp. butter
- Salt
- Beat the egg yolks into the potatoes.
- Add the remaining ingredients except the egg whites.
- Beat vigorously until light.
- Beat the egg whites until stiff, and fold the into the mixture.
- Spoon the potatoes lightly into a buttered baking dish.
- Bake in a hot oven (400F) for 15 minutes, or until well puffed and delicately browned.
