Apple and Almond Philly* cake

  1. Beat butter, Philly*, sugar and almond essence using an electric mixer until pale and fluffy.
  2. Add sour cream, ginger and eggs and beat until combined.
  3. Fold in flour and apple then spoon mixture into a lightly greased 24cm cake tin.
  4. Sprinkle almonds and raw sugar on top and bake in a moderate oven 180 degrees C for 50-60 minutes or until a skewer comes out clean.
