Blueberry Compote Recipe
- 2 1/2 c. frzn blueberries unthawed
- 1/3 c. sugar
- 1/3 c. water
- Combine 1 1/2 c. blueberries, sugar and 1/3 c. water in heavy small saucepan.
- Simmer over medium heat till berries burst, stirring often, about 10 min.
- Add in remaining 1 c. berries.
- Cook till compote coats spoon, stirring often, about 8 min.
- (Can be made 3 days ahead.
- Cover and chill.)
- Serve hot.
- This recipe yields about 1 1/2 c..
