Blueberry Compote Recipe

  1. Combine 1 1/2 c. blueberries, sugar and 1/3 c. water in heavy small saucepan.
  2. Simmer over medium heat till berries burst, stirring often, about 10 min.
  3. Add in remaining 1 c. berries.
  4. Cook till compote coats spoon, stirring often, about 8 min.
  5. (Can be made 3 days ahead.
  6. Cover and chill.)
  7. Serve hot.
  8. This recipe yields about 1 1/2 c..
