Mrs. Blue's Shrimp Salad

  1. Bring water to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turns pink.
  2. Drain well; rinse with cold water.
  3. Chill.
  4. Peel and devein shrimp.
  5. Place shrimp in a large shallow dish.
  6. Combine green pepper and next 8 ingredients; pour over shrimp, stirring gently.
  7. Cover and marinate in refrigerator 2 to 3 hours, stirring occasionally.
  8. Arrange leaf lettuce on individual serving plates; top with shredded iceberg lettuce.
  9. Spoon shrimp mixture evenly over shredded lettuce.
