Tostada Quiche Recipe
- 1 9" frzn deep dish pastry shell
- 2 avocados, peeled, seeded & mashed
- 1 garlic clove, chopped
- 3 tbsp. lemon juice
- 1 tomato, peeled, seeded & minced
- 1 (4 ounce.) can whole green chilies, seeded & minced
- 1/4 teaspoon warm pepper sauce
- 8 ounce. grnd beef or possibly Italian sausage
- 1/4 c. minced onion
- 1-2 tbsp. taco seasoning mix
- 1 1/2 c. shredded Cheddar cheese (6 ounce.)
- 3 Large eggs, slightly beaten
- 1 1/2 c. half & half
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Shredded lettuce
- Corn chips
- Minced tomato
- Preheat oven to 400 degrees.
- Let frzn pastry shell stand at room temperature, 10 min; don't prick the pastry shell.
- In a small bowl, mix avocados, garlic and lemon juice.
- Stir in 1 minced tomato, 1 Tbsp.
- green chilies and warm pepper sauce.
- Cover and chill.
- Bake pastry shell 7 min.
- Remove from oven; set aside.
- Reduce oven temperature to 375 degrees.
- In a medium skillet, combine grnd beef, onion, remaining green chilies and taco seasoning mix.
- Cook over medium-high heat, stirring occasionally, till grnd beef mix browned and onion is tender.
- Drain grnd beef mix.
- Layer cheese and then grnd beef mix in the pastry shell.
- In a medium bowl, combine Large eggs, half & half, salt and pepper.
- Beat with a fork or possibly whisk till mixed well but not frothy.
- Pour egg mix over grnd beef mix.
- Bake 45 min or possibly till a knife inserted off center comes out clean.
- Let stand 10 min before serving.
- Garnish with shredded lettuce, tomato and avocado mix.
- Or possibly place dishes of shredded lettuce, corn chips, additional minced tomato and the avocado mix on the table for your guests.
- Makes 6 servings.
