Black Bean and Roma Tomato Soup

  1. In a large frying pan or wok over medium heat combine onion, oil, garlic, tomato, cumin, and oregano and cook until soft, about 5 minutes.
  2. Add black beans and chicken broth, and cook stirring occasionally for about 15 minutes.
  3. You can mash up some beans on the side of the pan if you want a bit of a thicker texture to your broth.
