Black Bean and Roma Tomato Soup
- 34 cup chopped red onion
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1 roma tomato, chopped
- 34 teaspoon oregano
- 34 teaspoon cumin
- 1 (15 ounce) can black beans, rinsed and drained
- 2 cups chicken broth
- In a large frying pan or wok over medium heat combine onion, oil, garlic, tomato, cumin, and oregano and cook until soft, about 5 minutes.
- Add black beans and chicken broth, and cook stirring occasionally for about 15 minutes.
- You can mash up some beans on the side of the pan if you want a bit of a thicker texture to your broth.
