Curried Broccoli Soup
- 1 medium bunch broccoli, chopped
- 12 Spanish onion, chopped
- 1 tablespoon butter (preferably unsalted)
- 1 granny smith apple, peeled and chopped
- 2 cups chicken broth
- 1 tablespoon curry (or to taste)
- Peel and stem broccoli discarding 2 inches from bottom.
- Saute onion with curry until soft but not brown.
- Add apple and broccoli.
- Add chicken stock.
- Bring to boiling point, reduce heat and simmer approximately 20 minutes covered.
- Puree.
