Carrot & Cucumber Spikes

  1. Slice the cucumbers into 1/4 inch slices and arrange on a tray.
  2. Pat dry with a paper towel.
  3. Pipe a small dollop of the cream cheese onto the center of each cucumber.
  4. Spear the carrot stick through the cream cheese mixture and into the cucumber.
  5. Refrigerate until ready to serve.
  6. You will have carrot sticks left over...I just add these to my crudites platter or save them for a salad.
