BBQ Chicken Twice Baked Potatoes
- 3 whole Chicken Thighs
- 1 whole Onion, Chopped
- 2 cups BBQ Sauce
- 2 whole Baking Potatoes, Large
- 2 cups Shredded Cheddar Cheese, Divided
- 1/4 cups Heavy Whipping Cream
- 2 Tablespoons Butter
- 1 teaspoon Salt
- Black Pepper To Taste
- Combine chicken thighs, chopped onion, and BBQ sauce in a crock pot.
- Cook on low for 6-8 hours.
- Remove chicken from the crock pot and shred using two forks.
- Return to the crock pot and turn off.
- Allow chicken to marinate in the BBQ sauce.
- Preheat oven to 375 degrees F.
- Wash potatoes and poke several holes in each.
- Wrap with plastic wrap and microwave for 10-15 minutes or until a knife inserted in the center goes all the way through with ease.
- Allow to cool.
- Once potatoes have cooled, scoop out the potato into a large bowl.
- Reserve skins for stuffing.
- In a large bowl, combine potatoes, 1 3/4 cup cheddar cheese, whipping cream, butter, and salt and pepper.
- Whip mixture using a fork or hand mixer on the lowest setting.
- Spoon mixture back into potato skins.
- Top with remaining cheese and bake at 375 degrees F 20- 25 minutes or until potato is heated through and cheese is melted.
- Top with BBQ chicken and any other toppings you desire.
- I added jalapenos for heat!
