Mexican Supper Rice
- 1 lb ground beef, cooked and drained
- 1 (10 3/4 ounce) can cheddar cheese soup
- 2 -4 tablespoons taco seasoning mix
- 2 cups water
- 2 cups quick-cooking rice
- 1 (15 ounce) can corn, drained
- 1 cup grated cheese
- 1 -2 cup tortilla chips, crushed
- Mix all ingredients except rice, corn and toppings in large saucepan.
- Bring to a boil; reduce heat and simmer two minutes.
- Stir in rice.
- Cover and remove from heat.
- Let stand for 5 minutes.
- Add corn, mix thoroughly.
- Top with grated cheese and tortilla chips.
- Note: Can add a can of black beans drained or small can of chopped ortega chilis.
