Mexican Supper Rice

  1. Mix all ingredients except rice, corn and toppings in large saucepan.
  2. Bring to a boil; reduce heat and simmer two minutes.
  3. Stir in rice.
  4. Cover and remove from heat.
  5. Let stand for 5 minutes.
  6. Add corn, mix thoroughly.
  7. Top with grated cheese and tortilla chips.
  8. Note: Can add a can of black beans drained or small can of chopped ortega chilis.
