Beans & Greens Salad
- 1 (15-ounce) can black beans, drained, rinsed
- 1 (15-ounce) can garbanzo beans, drained
- 1/2 cup Italian dressing or vinaigrette
- 1 teaspoon freshly grated lime zest
- 1/4 cup sliced green onions
- 4 cups baby spinach leaves
- 1/4 cup chopped fresh cilantro
- 4 ounces provolone or mozzarella cheese, cut into cubes
- Combine beans, vinaigrette and lime zest in large non-metal bowl; mix well.
- Cover; refrigerate until chilled (at least 1 hour or overnight).
- Just before serving, stir in all remaining ingredients.
