Sugar-Free Chocolate Fudge
- 16 ounces cream cheese softened
- 1 teaspoon vanilla extract
- 2 ounces chocolate unsweetened melted in the microwave
- 1 pinch salt
- 1/2 cup granulated sugar replacement
- 1/2 cup pecans or walnuts, chopped
- Line an 8 inch square baking dish or pan with aluminum foil.
- Butter the foil to aid in releasing the fudge.
- Using an electric mixer; beat the cream cheese, vanilla extract and sugar substitute until smooth and creamy.
- Continue beating and slowly add the melted chocolate.
- Transfer into the prepared baking dish and level with a knife or spatula scraper.
- Cover and refrigerate overnight or at least 8 hours.
- Cut into squares.
- Store in the refrigerator and serve well chilled.
