Pepsi Braised Pork Loin

  1. Heat vegetable oil.
  2. Rub just enough vegetable oil on pork loin to cover.
  3. Season.
  4. Sear on each side and remove pork from pot.
  5. Add rum and deglaze.
  6. Be careful.
  7. The rum may ignite, so don't freak out or burn anything!
  8. Add Pepsi.
  9. Return pork loin to the pot.
  10. Bring to a simmer and cover.
  11. Cook for approximately 30 minutes or until pork reaches desired doneness.
  12. Remove pork loin and let rest five minutes before slicing.
  13. Add brown sugar.
  14. Whisk.
  15. Whisk water and cornstarch together in a small bowl.
  16. Add to braising liquid while whisking.
  17. Bring to a boil to activate cornstarch.
  18. Variations; Vanilla extract, root beer, molasses, lemon, malt vinegar
