Chocolate Cookies Made with Vegetable Oil
- 1 Egg yolk (room temperature)
- 1 just 1 dash Natural Salt
- 1 tsp Lemon juice
- 50 ml Vegetable oil
- 30 grams Powdered sugar
- 20 grams Chocolate
- 70 grams Cake flour
- 20 grams Cornstarch
- 20 grams Cocoa powder
- Combine the dry ingredients and sift.
- Chop the chocolate and melt in the microwave for 3 minutes.
- Add lemon juice and salt to the egg yolk.
- Beat well with an electric mixer.
- When it is well mixed, add vegetable oil a little bit at a time, beating after each addition.
- The dough will thicken.
- Add powdered sugar and beat again.
- Add melted chocolate and beat.
- Sift the dry ingredients into the bowl and lightly fold in.
- When the dough comes together, wrap in plastic wrap and shape it into a 3cm x 15cm rectangle.
- Put it in the refrigerator for at least 30 minutes.
- Preheat the oven to 340F/170C.
- Slice the cookies into 1 cm.
- Bake at 340F/170C for 10-13 minutes.
