Chocolate Cookies Made with Vegetable Oil

  1. Combine the dry ingredients and sift.
  2. Chop the chocolate and melt in the microwave for 3 minutes.
  3. Add lemon juice and salt to the egg yolk.
  4. Beat well with an electric mixer.
  5. When it is well mixed, add vegetable oil a little bit at a time, beating after each addition.
  6. The dough will thicken.
  7. Add powdered sugar and beat again.
  8. Add melted chocolate and beat.
  9. Sift the dry ingredients into the bowl and lightly fold in.
  10. When the dough comes together, wrap in plastic wrap and shape it into a 3cm x 15cm rectangle.
  11. Put it in the refrigerator for at least 30 minutes.
  12. Preheat the oven to 340F/170C.
  13. Slice the cookies into 1 cm.
  14. Bake at 340F/170C for 10-13 minutes.
